If we talk about the Cantina di Nizza, do we have to limit ourselves to just wine? The history of Vermouth di Torino comes from afar and is lost in the mists of time.
The Cantina di Nizza has made its own version of it by adding a unique and typically “Nicese” flavour to an ancient recipe. It takes the name “Paleaurum”, evoking the glorious origins of the city of Nizza Monferrato and immediately acquiring a leading role in the Cantina di Nizza range of wines. A modern and elegant bottle combined with a classic label without being retro immediately strikes those who encounter it for the first time.

On tasting, there are no doubts: the Vermouth style is recognisable from the very first moment by its intense and enveloping perfume, like all muscat-based processes, but it is the details that intrigue and make it its peculiarity as well as its strength. A faint but well-defined scent leaves no doubts, and among the various aromatic notes it also reveals that of the Nizza hunchback cardoon, a long-standing slow food presidium and absolute pride of the local culinary tradition.
