The Martinotti Method involves fermenting the wine in stainless steel containers under pressure (autoclaves) at a controlled temperature for a period that varies according to the quality of the final product. As with all Cantina di Nizza wines, our “Nei” is also synonymous with quality and therefore remains in autoclaves for over 6 months, which allows for a product characterised by a more pronounced yeast aroma and finer perlage.
